How should I store Orange Blossom Fudge?
Fudge should be stored in a cool, dry place—away from direct sunlight and odors. Because the environment effects the shelf-life of fudge, it is important to maintain a consistent temperature of 65-72 degrees, with a relative humidity of 50%-55%.

What is the shelf-life of Orange Blossom Fudge?
Orange Blossom Fudge makes your fudge fresh to order, thus maximizing the shelf-life. If you are a retailer selling our fudge in a candy case, we suggest that you sell a 6lb slab of fudge within 14 days. Once the fudge is cut into ¼ pound pieces it will begin to dry out. To maximize the shelf-life of your fudge we suggest that you do not cut the fudge until you are ready to place it into the candy case.

Can I freeze or refrigerate fudge?
We do not recommend that retailers refrigerate or freeze the fudge. Odors might be absorbed into the product and there is a risk of sugar or fat bloom if the cooling and warming of the fudge is not precise.
Sugar bloom is normally caused by surface moisture. The moisture causes the sugar in the fudge to dissolve. Once the moisture evaporates, sugar crystals remain on the surface. If this process is repeated, the surface can become sticky and even more discolored. Although sugar bloom is most often the result of overly humid storage, it can happen when the fudge has been stored at a relatively cool temperature and is then moved too quickly into much warmer surroundings. When this happens, the fudge sweats, producing surface moisture.
Fat bloom is similar to sugar bloom, except that it is fat or cocoa butter that is separating from the fudge and depositing itself on the outside of the fudge. As with sugar bloom, the most common causes of fat bloom are quick temperature changes and overly-warm storage.
Although bloom affects the appearance of the fudge; fudge that has suffered bloom is still okay to eat. To prevent this from happening to your fudge, simply use proper storage methods.
